What you’ll need:
1 pack linguine
3 TBS olive oil
2 TBS butter
3/4 cup ramps, chopped
4-5 fresh sage leaves
1 TBS fresh Oregano
1/3 cup fresh lemon juice (~2-3 lemons)
1/3 cup reserved pasta water
1/2 cup grated cheese (Parmigiano Reggiano or Grana Padano recommended)
Salt/freshly ground black pepper and red pepper flake to taste
Fresh basil and parsley for finishing
What to do:
1. Well, first off, let’s cook the linguine. Follow the instructions on the box, but before draining, reserve 1/3 cup of pasta water for later. Set the pasta aside.
2. In a separate pan, heat up the olive oil on medium high heat and add the ramps. Sauté for 1-2 minutes. Then, add the chopped sage and oregano and sauté that for another 2-3 minutes. During this time, season with salt, black pepper and a little bit of red chili flake. Add in the butter and let it melt.
3. Once the butter has melted, add the lemon juice and reserved pasta water. Let the sauce bubble up until it thickens ever so slightly, 2-3 minutes at most (adjust salt/pepper if needed). Now add the linguini and toss until evenly coated. Add in your cheese and continue to toss until your pasta is just the right amount of saucy (you’ll know when!).
4. Last but not least, chop up some fresh basil and parsley to add in right before plating. One final toss, and voila! Dinner is served.
